Oh, Happy Day...Nine is Fine...

What a fun young man this guy is. I love celebrating things with him...especially his birthday! He is a wonderful young man whose love of God's word is amazing. He has a mighty passion for animals and people in need. He has a gentle temperament. I appreciate that he is diligent and trustworthy in all that is required of him. He loves school...which makes teaching him a delight. We love you young man....Happy Birthday to you!

His morning started EARLY...opening presents....which he had to find one on a treasure hunt that ended in the dryer..."buried treasure" we said. We played an insane amount of video games (I'm still recovering), ate a lot of junk food and enjoyed just hanging out.

For breakfast he requested eggs, bacon and english muffins. For lunch he wanted cereal and soda (I skipped lunch especially as the soda was the blue kind - so gross). For dinner he was happy with lasagna, green beans (which he informed me he didn't really "order"), applesauce and keifer rolls....and for dessert we made Banana Split Pie - oh, yum....the night ended in a was a good day!

If you would like the recipe for either the Keifer Rolls or the Banana Split Pie let me know.

Thank you for stopping by.

Leave it to my son to figure this out for me! For years I've, off and on, made home made tortillas but with not so pleasing results....they never tasted as good as the stores and they never ROLLED...and how can you have burritos without a rolled tortilla? After several recipes I found one that is calls for half lard and half oil instead of all oil and I improvised and put my oldest son in charge. He did a wonderful job as they turned out with great flavor and they rolled...rolled...rolled! The trick, he said, was to have the pan really, really HOT and to only cook the tortillas for a few seconds on each side and keep them covered with a towel before serving!

Thank you son for figuring this out - can't wait till we have burritos or tacos again for your wonderful tortillas.

Eleven is Heaven

Our daughter turned eleven on February 9th. I think eleven is a very important seems this is when a child goes from just that a child into a young man or woman....this is the age that will define their "youth". She is full full full of life. She has a huge amount of energy, and is passionate about baking, shooting, crafting, sewing - basically anything that is creative and challenging (well not school so much). She loves to try new and thrilling things...things I would never the scariest roller coaster at the theme park last year.

Her father and I look forward to seeing how the Lord will work out His will in her life.
We are so thankful for the time we have with this little burst of energy...she makes our life full and very colorful!

She loves it that her birthday is in the same month with Valentine's Day because of all the heart themed the pizza.

Her day ended with playing "Barbie" with her dad. Her dad has such a funny personality and we were all in stiches because of the silly comments he was funny!

Winter Happenings....

Risk is one of our favorite family games...Our little guy usually only hangs in for a few turns.

Our daughter is so silly...she dressed her cat, Blackie, up and had a tea party - not sure that
Blackie enjoyed it but she did.

Big brother built this snow cave for his siblings and they all, especially this guy, had fun in it. It is so like the Lord to bless me with a child who love the snow almost as much as me...and he loves building snowpeople...just like his mama!

I really love this picture of the mountains we live in - it was more beautiful as the time went on...and this picture does not do it justice. This picure gave me hope. I've been struggling with trying to be "happily" content while the Lord works out His plan for our family...some days I feel that we have been forgotten about - but as we all know this is not true in the least as God's word clearly says that He loves us and cares for us....and He has plans for us. Things have taken place that have stolen our joy and happiness BUT I think the Lord let us go through this to show us that those things are carnal and not as important as leaning on the promises of our great and mighty King of all Kings....Thank you to everyone for your prayers and friendship during our "adventure"....We are really asking the Lord to reveal the plans He has for us...asking Him to help us make some life!

Food...I really enjoy decorating and making food look beautiful. So I decorated our lasagna with much fun to serve.
